Of Sarawak’s ethnic communities, the A-Likou | Melanau are the most uniquely assimilated. Marrying indigenous ancestral culture with traditional Malay lifestyle. Along with their prowess as seafarers, paddy and sagu | sago farmers, this has shaped an equally especial food heritage. Defined by coastal ingredients and terroir of the mighty Rajang river along which the Melanaus concentrated their early settlements of Tall Houses, their food treasures celebrate freshest seafood, jungle vegetation and most defining - sagu | sago, in every. edible. form.

All of which are showcased in thewarisancentrepiece of Linut.

In Linut, sagu replaces rice as the flavour vehicle. Sharing, a light and playful appetite, and a pair of bamboo candas skills are required to gather the starchy paste to be dipped into an array of intensely flavoured accompanying cicahs, lauks and ulamans

There’s a legend surrounding Linut and Melanaus from a particular area, suffice to say it involved an expected marriage and death by linut! But other than this pantang, Linut is the pride of Melanau heritage cuisine.

Ethnic Sarawak Nights

Passionately Sarawakian, Karen started #ethnicsarawaknight, her series of dining evenings, curated for a singular purpose - to share the undiscovered gastronomic treasure that is the ethnic cuisine of her home state. With 40 distinct sub-ethnic groups, a primary rainforest that provides native tribes with indigenous ingredients and flavours, and age-preserved ways of cooking - Sarawak’s indigenous cuisine is a true collection of culture, legacy, and history. Karen uncovers these flavours, refines the techniques and curates them into cultural morsels for her diners to experience. Not just a meal, also an insight into Sarawak’s ethnic heritage ways through food. Come join Karen and her team as they take you on a trip to Borneo!
